Over the last year or so we have gradually increased the number of nights we eat vegetarian. We also have the added complication that my middle child can’t tolerate a lot of dairy and our oldest doesn’t eat mushrooms. This last quarter I’ve been trying out many different recipes to find the best ones I’ll keep in our recipe rotation. We had a number of dishes we won’t be making again due to lack of flavour or being too fiddly. Here are five that made the cut:
- Pasta alla norma Eggplant is not a favourite for the kids, but this was a winner. I’ve added capsicum and/or zucchini, which both work well.
- Simple Coconut Quinoa and Lentil Curry Really tasty and easy.
- Baked Farro with Summer Vegetables (this has cheese, but I make a portion with no or minimal cheese)
- Pumpkin dahl (easily adjustable to what you have on hand, I roast extra pumpkin when I’m making it and just mash it with a fork.) I serve it with homemade naan.
- Vegan chilli with rice. (another one that you can easily use whatever vegetables you have on hand)

Oooh the red curry lentils and quinoa sounds so yummy! So does that baked farro!
Yum. I have a lot of quinoa and really need to find some good recipes to use it up, so I’m heading to read the Coconut Quinoa recipe now!
We’ve been going a lot more vegetarian too and I love finding new, tried and trued recipes, so thank you for sharing your go-to recipes. I am especially intrigued to try the curry and the chili! Oh, and I love farro. Not too many people know about it/cook with it, but it’s a great alternative to rice.

That curry sounds like something I would enjoy. And I have a craving for chilli for days maybe weeks now. So maybe give that a try too.
