Crispy Potato Wedges with Lentils and Guasacaca Sauce
The Quick Lowdown:
- Ingredients: potatoes, paprika, salt, pepper, olive oil, lentils, coriander leaves, red onion, garlic, avocado, chilli, parsley, rice vinegar, lime
- Prep work: You need to bake the potatoes, cook the lentils and make the sauce so there is a few elements.
- Dirty dishes: chopping board, knife, stick blender and jug, saucepan, roasting pan, bowl
- Family-friendly: I think so.
- Regular rotation worthy: Yes, this has bright, fresh flavours and offers an interesting way to do potatoes. You could also do it with sweet potato which would be yummy.
Spiced Pumpkin Doughnuts DOffins
This baked doughnut recipe requires a nonstick doughnut pan, which I don’t have. However, McKinnon suggests a 12-hole muffin pan as an alternative, which is what I did.
The Quick Lowdown:
- Ingredients: plain flour, baking powder, bicarbonate of soda, cinnamon, ground ginger, allspice, ground nutmeg, ground cloves, salt, oil, brown sugar, vanilla extract, eggs, pumpkin puree, butter, white sugar
- Prep work: I had to make the pumpkin puree first, so you need a bit of time for that; other than that, it’s a pretty straight forward muffin style recipe.
- Dirty dishes: muffin pan, two bowls, measuring cups and spoons
- Family-friendly: Most of my adult kids ate them and liked them
- Regular rotation worthy: Probably not. I don’t make muffins much anymore because I’m not packing kids lunches.
Crispy Potato Tacos
The Quick Lowdown:
- Ingredients: potatoes, cheddar, garlic, cumin, paprika, coriander leaves, salt, tortillas, oil, lettuce, sour cream, tomatoes, red onion, red chilli, dried oregano, white sugar, vegetable stock
- Prep work: There are a few different elements needed to pull this dish together, but overall was not too difficult and worth it.
- Dirty dishes: chopping board, knife, stick blender and jug, saucepan, frying pan, potato masher
- Family-friendly: Yes, definitely
- Regular rotation worthy: Maybe not my regular rotation, but I will cook these again.
