I’m cooking through the Tenderheart Cookbook.

Salt and Vinegar Kale Chips with Fried Chickpeas and Avocado

The Quick Lowdown:

  • Ingredients: Kale, olive oil, apple cider vinegar, garlic, salt, pepper, cooked chickpeas, paprika, chilli powder, eggs and avocado
  • Prep-work: Easy
  • Dirty dishes: Cutting board, knife, baking tray, frying pan.
  • Taste: Even G liked this and said he’s have it again.
  • Family-friendly: Maybe, if they like kale
  • Regular rotation worthy: Yes. This is easy and tasty. Great for dinner after church.

Green Curry, Spinach and Lentil Soup

The Quick Lowdown:

  • Ingredients: olive oil, brown onion, ginger, garlic, Thai green curry paste, vegetable stock, red lentils, white sugar, salt, black pepper, baby spinach, coriander leaves, coconut milk, lime, fried shallots
  • Prep-work: Easy
  • Dirty dishes: Cutting board, knife, saucepan, blender.
  • Taste: This was tasty due to the curry paste.
  • Family-friendly: Not if they’re not into spicy
  • Regular rotation worthy: Yes. This was another easy and tasty recipe that I made quickly before Sunday night church and we ate it when we got home.
