List #42: What I ate last week

Julie’s Sweet Potatoes with Curried Lentils
  • Monday – Steak night at The Union in Windsor for a friend’s birthday. It was supposed to be a surprise, but one of the guests didn’t get the memo and let the cat out of the bag in the morning. So steak, chips, green salad and a couple of glasses of red wine.
  • Tuesday – we had our family dinner, rescheduled from Monday night. Chicken schnitzels with roasted potatoes, broccoli and zucchini.
  • Wednesday – Julie’s Sweet Potatoes with Curried Lentils.
  • Thursday – I had church music practice at 5 pm tonight and didn’t have time to cook beforehand because I had to take on the song selection and preparation at the last minute. I picked up lamb shank soup and a loaf of bread from the grocer on my way home. They have a kitchen where they make lovely take-home meals.
  • Friday – take out Friday. I had fettucinci bolognese.
  • Saturday – The girls came over for some puzzle making in the afternoon and stayed for dinner. I made One-pan saganaki-style prawns with risoni. I added in some broad beans from our garden.
  • Sunday – we’ve been helping lead the Alpha course at church on Sunday evenings and dinner is provided, but we got a text just after lunch reminding us that it wasn’t on this week. That detail had completely escaped me and I had nothing in the house for dinner and did not feel like thinking about it. G went and picked up some minestrone and bread from the grocer—luckily they have a few different styles of soup.

Hmmm … that was a very slack week for cooking. I’m pretty sure I’ll be cooking more this week. What’s your go to if you find yourself caught up and needing dinner?

  1. I love this snapshot of your week and I will be doing that too at one point.

    My go to is probably instant rice mediterranean style and then add in tomatoes and mozzarella. I usually have all this three things at home. Or I will make grilled cheese if I have that. Another go-to easy quick recipe is my tomato soup. I think I blogged bout that? … I did not. I just use tomato passata (sieved tomatoes) and add salt, pepper and mozzarella and sometimes a spoonful of pesto. Easy quick and warm.

    1. These all sound like great options. Having things in the pantry already makes last minute meals so much easier.

  2. Great week of meals! My fastest, in-a-pinch meal is tortilla wraps, I use whatever veg I have around, and some salsa or some hummus or avocado or whatever I have on hand.

    1. Tortilla wraps would be a great option.

  3. I think when we are in a pinch with no dinner plan, we usually either eat something from the freezer, or get takeout. If it were just me, I would probably have eggs for dinner.

    Looks like some great meals, and I’m glad you enjoyed the lentil / sweet potato dish. We had it again last week, and my husband and I have both had leftover lentils with a fried egg for breakfast. He put salsa on his, I put an avocado on mine. Tasty!

    1. I’m more likely to make do with what I can scrounge if it’s just me, but with G and E home I have to do better. I had the leftover lentils on toast for one of my lunches.

  4. Yum, that shrimp dish looks so good! I could sub in a different kind of rice to make it GF. I’ll have to try this soon!

    My go to easy dish is scrambled eggs. It is very boring/easy, but fits the bill!

    1. Yes, I think the prawn dish would be great with rice. I eat scrambled eggs so often for lunches that I can’t really go for another round at night.

  5. We rarely do this, but basketball season starts tonight – so last night we mapped out what meals we would eat this week. There will not be a ton of cooking. I have a turkey breast in the fridge and that’s often our go-to meal if we’re in a pinch. Everyone loves it. We buy it at Costco. We also almost always have leftovers. I buy the rotisserie chickens at Costco, and those come in handy. We make breaded chicken strips from the freezer sometimes, esp if I have another option.

    1. Having a plan does help when life is busy. I rotisserie chicken is always a good standby.

  6. Love to see what other people eat. My go-to is always a soup or a salad because it’s so easy to throw something together.

    1. Yes, these are easy if you have what you need at home.
