Marinated Celery with Couscous and Pickled Golden Raisins Sultanas

I’m cooking my way through the Tenderheart Cookbook.

The Quick Lowdown:

  • Ingredients: celery, garlic, red chilli flakes, cummin seeds, apple cider vinegar, white sugar, olive oil, salt, black pepper, vegetable stock, couscous, parsley, chives, sultanas, red onion.
  • Prep work: Only a small amount of chopping, preparing couscous, very simple.
  • Dirty dishes: chopping board, knife, saucepan, bowls
  • Family-friendly: I think so.
  • Regular rotation worthy: Yes, this is a good salad and solves the question of what to do with some of the celery that fairly regularly comes in our veggie box

Turnip Tortilla

I got a bunch of turnips in our veggie box, and we were not long home from Spain, where I ate almost daily tortillas, so I was keen to get into this. I added potatoes to the mix because there weren’t enough turnips.

The Quick Lowdown:

  • Ingredients: oil, brown onion, turnips, salt, eggs, potatoes
  • Prep work: Not a lot; you just need to slice up the veggies fine. The veggies are sauteed before adding to the egg mixture.
  • Dirty dishes: chopping board, knife, frying pan, bowl
  • Family-friendly: Yes
  • Regular rotation worthy: Yes
