Tenderheart Cook #46 and #47

I’m cooking my way through the Tenderheart Cookbook.

Inspired by chana saag

This is a really simple curry recipe that uses frozen spinach.

The Quick Lowdown:

  • Ingredients: brown onion, ginger, garlic, chilies, butter, cumin seeds, garam masala, frozen spinach, salt and pepper, vegetable stock, coconut cream, cooked chickpeas, rice to serve
  • Prep work: I only had to roughly chop the onion, garlic, ginger and chillies then I used my stick blender to puree them.
  • Dirty dishes: chopping board, knife, stick blender and jug, saucepan
  • Family-friendly: This is not very spicy so would be fine for a family
  • Regular rotation worthy: Yes, it was easy and quick with good flavour.

Chana saag (or any leftover curry) fried rice

We had this dish the next night, using the leftover chana saag. It was very good and such a clever and tasty way to use up leftover curry. Recipe here.

  • Ingredients: eggs, ginger, cold rice, soy sauce, frozen peas, leftover Chana saag or other curry, green onions
  • Prep work: I had to whisk up the eggs and chop the spring onions and ginger
  • Dirty dishes: chopping board, knife, frypan, bowl
  • Family-friendly: Definitely
  • Regular rotation worthy: Yes. It would be interesting to see what it is like with a more saucy curry.

I often use fried rice to use up leftover bits and pieces in my fridge, but I’d never considered it a way to use up leftover curry. Do you make fried rice to use up leftovers? What kinds of things do you usually put in fried rice?

  1. I am a huge fan of chana masala, but not as big of a fan of the saag based dishes. I prefer ones with a bit more sauce. However, your dish looks good! I would probably bump up the spice, as I like it spicy!

  3. I’m not a big fan of curry, but I do like the chickpea part. Simple and easy and family friendly all works for me though.
