Breakfast Smoothie Bowl

This recipe is inspired by the Creamy Chai Cauliflower Smoothie Bowl in Rise &Run by Shalane Flanagan and Elyse Kopecky. The book has a heap of great ideas for healthy breakfasts and snacks. I’ve made a few changes to the original recipe, including adding rolled oats and protein powder, to make it a more substantial breakfast and ensure I hit my protein target. You can steam and freeze a head of cauliflower cut into florets to use as needed. You’ll also need half a frozen banana on hand. I’ve just started using a vanilla milkshake-flavoured protein powder; when I use a plain protein powder, I add a couple of Medjool dates for sweetness. Frozen (I mean actually still frozen) mixed berries work fabulously on this smoothie bowl, and it’s so easy just to pull a handful out when needed. Shoutout to Coco and her oatmeal topped with frozen berries, which prompted me to try unfrozen, frozen berries. This has 35-40g of protein, depending on what you decide to top it with.

High Protein Caulifower Smoothie Bowl

Ingredients

  • 3/4 cup cashews
  • 1/3 cup rolled oats
  • 1/2 cup frozen cauliflower
  • 1/2 frozen banana
  • pinch of salt
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp cardamon
  • 3/4 serve of protein powder

Directions

  1. Put the cashews in 1 cup of water and soak overnight in the fridge.
  2. In the morning put all the ingredients in a blender and blend until smooth.
  3. Scrape into a bowl and top with your choice of fruit, seeds and nuts.

  1. Wow! That packs a real protein punch.
    My go-to breakfast (or lunch) lately has been cottage cheese with drippy PB, pumpkin seeds, and raisins. I’m not sure how much protein I’m getting but it’s a lot and it’s soooo tasty and filling. I’m getting hungry now just thinking about it. I need to get back to the grocery store to buy more cottage cheese. I go through it at an alarming rate…

    1. Now that I’m back eating dairy I must give cottage cheese a try. I think it would be an easy go to for protein.

  2. HMMM! Frozen cauliflower in a smoothie??? I’m intrigued! I’ll bet you can’t taste it at all, with all the other flavorings. Great idea for a recipe- I don’t have Shalane’s book but I hear all good things about it.

    1. Yes, you can’t taste the cauliflower. It’s helpful getting a serve of veggies for breakfast. We have made and enjoyed a lot of the recipes in the book.

  3. I’ve never tried any protein powders, I don’t know how to pick one that is healthy or not. But protein would be a good idea. I might give this recipe a try! Also, I like the idea of getting your veggies in at breakfast. Usually I only get that when I make a scramble.

    1. I am using one that a sports nutritionist recommended to G a while ago. Musashi brand.

  4. Wait… cauliflower in a sweet dish? I can not imagine. Not sure I would make this. May try if someone shared a spoonful with me. Does it taste like cauliflower?

    It does look yummy though.

    1. It doesn’t taste like cauliflower. It really does taste like a sweet dessert to be honest.
