I’m cooking through the Tenderheart Cookbook.
Charred Cauliflower and Crispy Tofu with Sweet Peanut Sauce

The Quick Lowdown:
- Ingredients: oil, cauliflower, salt and pepper, chickpea flour, garlic, firm tofu, lebanes cucumbers, eggs, bean sprouts, lime and I added pickled red onions.
- Prep-work: There were a few steps in this. You had to roast the cauliflower, make the sauce and pan fry the tofu
- Dirty dishes: Cutting board, knife, roasting dish, bowl, frying pan, saucepan
- Taste: I realised I don’t really like this tofu (I’m not sure whether I really like any tofu)
- Family-friendly: Maybe, if they like tofu.
- Regular rotation worthy: Probably not, but the peanut sauce is moreish. The salad without the tofu would be good.
Spiced Tomato Jam

The Quick Lowdown:
- Ingredients: mustard seeds, cardamon, cherry tomatoes, white sugar, ground ginger, chilli powder, lemon juice
- Prep-work: There is very little prep work. You do need to sterilise the jars, but I use the steam oven, so it’s easy.
- Dirty dishes: Cutting board, knife, saucepan.
- Taste: Good, but I think my taste runs more to a relish or chutney. I also think I needed to cook this for longer as it would have been better if it was thicker.
- Family-friendly: Probably
- Regular rotation worthy: I preferrelish if I’m going to make something like this with tomatoes.
