I’m cooking my way through the Tenderheart Cookbook.

Ginger and Coriander Noodle Pancake

I cooked this for my lunch one day when G was away. I had lots of coriander and ginger, plus a packet of instant noodles that E had bought when he had his wisdom teeth out and had been taking up room in my pantry since then.

The Quick Lowdown:

  • Ingredients: instant ramen noodles, soy sauce, rice vinegar, sesame seeds, coriander leaves, ginger, oil, sea salt
  • Prep work: You need to make a ginger and coriander oil first but it’s super easy.
  • Dirty dishes: chopping board, knife, saucepan, frying pan, bowl
  • Family-friendly: I think so.
  • Regular rotation worthy: It’s probably not the healthiest dish, but it was fun for a change.

Ras al Hanout Cauliflower Wedges with Smashed Chickpeas

I made this while G was away because he doesn’t eat cauliflower, so I must make the most of it.

The Quick Lowdown:

  • Ingredients: cauliflower, olive oil, ras el hanout, sea salt, black pepper, red wine vinegar, tahini, lemon, garlic, ground cumin, cooked chickpeas, parsley
  • Prep work: The cauliflower is roasted, and the mashed chickpeas are easy to make in a big bowl.
  • Dirty dishes: chopping board, knife, roasting pan, bowl
  • Family-friendly: If your family eats cauliflower, then yes.
  • Regular rotation worthy: I would eat this again. The chickpeas make it a meal and are really tasty with roasted cauliflower.

  1. My husband will eat basically everything…except something with raw egg. Years ago he loved a cheesecake a friend of mine made. When I got the recipe, I discovered there was a raw egg in it (it was an uncooked cheesecake). It seems like a very odd ingredient, so I’m not quite sure what was up with that. But, that was the end of my husband being interested in that dessert!
    So he won’t eat cookie dough ever.
    That’s okay…more for me 🙂

    1. I suppose there are reasons not to eat raw eggs, but I still do it. I will alwys lick out the cake batter from the bowl.

  2. Oh I could write a whole blogpost on things the husband doesn’t eat which really limits the food I can cook. All the things I love eating and that are healthy he basically dislikes…. Sigh.

    That noodle pancake looks really interesting. I would have never thought to do something like that.
