Cooking my way through the Tenderheart Cookbook.

Charred Zucchini and Sweetcorn with Basil Caesar-ish Sauce

The Quick Lowdown:

  • Ingredients: All ingredients were either in my pantry or common veggies I’d often had in my weekly box.
  • Prep-work: The zucchini was cooked in the frying pan in batches so was a bit fiddly. My daughter did this though while I made the dressing.
  • Dirty dishes: Cutting board, knife, frying pan, stick blender processor bowl.
  • Taste: I made this for a family dinner and everyone enjoyed it.
  • Family-friendly: yes, definitely.
  • Regular rotation worthy: In summer, when these veggies are in season this will get a workout.

Carrot Peanut Satay Ramen

The Quick Lowdown:

  • Ingredients: All ingredients were in my pantry or common veggies. I used a dry dashi stock.
  • Prep-work: The carrots in this are grated and I used the food processor to do this. This is a quick meal to prepare, all up it took about 20mins.
  • Dirty dishes: Cutting board, knife, food processor, medium saucepan, large saucepan.
  • Taste: This is yum! The soup base has peanut butter in it which makes it a creamy, satisfying meal.
  • Family-friendly: yes, if everyone can eat and likes peanuts.
  • Regular rotation worthy: I’m always looking for vegetarian recipes that are substantial enough to be a complete meal in our house. Meals need to satisfy and fuel our running. This hit the spot.

Brussels-sprouts-instead-of-egg Salad

I often get a box of veggies delivered and a few weeks ago we got brussels sprouts in the box. Hubby is not a fan but I saw this salad and thought it would make a good lunch for me. I included the optional eggs for some protein.


The Quick Lowdown:

  • Ingredients: I had most of what I needed in the pantry or fridge.
  • Prep-work: The brussels sprouts are roasted, and need to cool, but I did mid-morning so they were cooled down by the time I was ready to make lunch.
  • Dirty dishes: Cutting board, knife, bowl, baking tray.
  • Taste: This is yum!
  • Family-friendly: not for my family.
  • Regular rotation worthy: I don’t usually buy brussels sprouts but next time they come in a box I’d make this.

  1. I love brussel sprouts but I think I cook them incorrectly. I have to try the open sandwich! The other two dishes look delicious, too. Thank you for these ideas!

    1. I love brussell sprouts if they have some nice char on them, so roasted is good.
