Huck’s broccoli and lettuce salad with an accidental ranch

I often have lettuce and broccoli in my fridge so this is a really good salad option for those times.

The Quick Lowdown:

  • Ingredients: Broccoli, lettuce, lemon, pine nuts, and green onions are all usually in my kitchen. The dressing contains mayonnaise, buttermilk (which I didn’t have and subbed in milk/vinegar), garlic, and green onion.
  • Prep-work: Easy
  • Dirty dishes: Cutting board, knife, baking tray, serving dish, jam jar to mix the dressing.
  • Taste: This was good, fresh with a bit of oomph from the roasted broccoli.
  • Family-friendly: I think so.
  • Regular rotation worthy: Yes. This is easy and tasty.

Cashew Celery

I don’t love celery, but this was really good. I switched out the tofu for chicken thighs because G will not eat tofu.

The Quick Lowdown:

  • Ingredients: The stirfry sauce was made with stock, soy sauce, corn flour and rice wine which I always have in my pantry. The rest of the ingredients are also regularly in my fridge.
  • Prep-work: Easy
  • Dirty dishes: Cutting board, knife, frypan.
  • Taste: Even though this is a simple stirfry, the combination of celery and cashews made it really tasty.
  • Family-friendly: I think so.
  • Regular rotation worthy: Yes, especially since it is an easily adaptable stir-fry recipe and I often have celery in my fridge that I’m looking for ways to finish.

  1. I am not a fan of celery but I can see that paired with cashews it might make a nice flavor combination. And the salad sounds good too. I never have broccoli in the house though… I also realized that proces for broccoli doubled in the last year. Crazy.

    1. You never have broccoli? THat’s one of my favourite veggies, although I know it can be a bit hit and miss with people.
