Charred gai larn and farro with soy tahini

I’d made the soy tahini sauce before to serve with broccolini, but this is the first time I’ve made the whole dish.
The Quick Lowdown:
- Ingredients: farro, gai larn, oil, black pepper, salt, coriander leaves, sesame seeds, tahini, soy sauce, chilli oil, garlic
- Prep work: There was not much prep work
- Dirty dishes: chopping board, knife, saucepan, sieve, bowl
- Family-friendly: I think so.
- Regular rotation worthy: Yes. I will also be making the tahini sauce as a tasty addition to other dishes.
Carrot and Cannellini Bean Tray Bake With Yuzu Lemon Vinaigrette

I had a lot of baby carrots in my veggie box this week, so I decided to make this dish. However, I couldn’t get to a shop that carries yuzu juice, so I made it with lemon.
The Quick Lowdown:
- Ingredients: carrots, olive oil, cannellini beans, leek, lemon, coriander leaves, salt, pepper, flaked almonds, maple syrup, garlic
- Prep work: All I had to do was scrub the carrots, slice lemon, grate garlic and pick some coriander leaves, so it was pretty hands-off.
- Dirty dishes: chopping board, knife, roasting tray, colander, bowl
- Family-friendly: It was at our place.
- Regular rotation worthy: Yes. We had it as a side, but it would also work OK as a light dinner because the beans add protein.
I love roasted carrots? How about you? What’s your favourite veggie dish?
