Cheesy Kale and Rice Cake Gnocchi Bake

I had a big bunch of kale to use but didn’t want to go to the Asian supermarket so I substituted gnocchi for the rice cakes. One of the great things with this cookbook is that for every recipe swaps are provided, something that makes me very happy.
The Quick Lowdown:
- Ingredients: oil, garlic, gochugaru, tomatoes, salt, sugar, vegetable stock, rice cake sticks or gnocchi, kale, cheddar cheese, mozzarella, green onions
- Prep work: Very little chopping, cooking on the stove for about 15 mins then into the oven to brown up for 15-20 minutes, so overall a very easy cook.
- Dirty dishes: chopping board, knife, frying pan, lid
- Family-friendly: I think so, as long as the girls aren’t here who don’t like cheese.
- Regular rotation worthy: I will definitely be making this again.
Cauliflower Adobo

I had a caulflower and make this as a side dish.
The Quick Lowdown:
- Ingredients: oil, cauliflower, cloves, bay leaves, black pepercorns, soy sauce, rice vinegar, brown sugar, green onions
- Prep work: Not a lot of chopping but you had to brown the cauliflower first before cooking in the sauce.
- Dirty dishes: chopping board, knife, dutch oven
- Family-friendly: If they like cauliflower.
- Regular rotation worthy: Not for me. It was fine but I have other cauliflower dishes I prefer.
